Spring honey is delicate and very mild compared to other Irish honeys, yet with a distinct flavour that is so delicious. Made primarily from Rapeseed, Whitehorn, and everything that blooms during April and May.

Rapeseed honey, also known as canola honey, is a type of honey produced by bees that primarily forage on the nectar of rapeseed flowers.

 

Flavor and color: Rapeseed honey has a mild and delicate flavor with a hint of floral sweetness. It typically has a light amber to pale yellow color.

Crystallization: Rapeseed honey tends to crystallize relatively quickly compared to some other varieties of honey. The texture of crystallized rapeseed honey is smooth and creamy.
